Ingredients
For the Marinated Tomatoes:
- 200 g cherry tomatoes, halved
- 1 small shallot, finely minced
- 1 tbsp (15 ml) fresh dill fronds
- 1 tbsp (15 ml) olive oil
- 1 tbsp (15 ml) red wine vinegar
- Cape Herb & Spice Smashed Avo Shaker, to taste
For the Avocado Mixture:
- 2 large ripe avocados
- 30 g fresh chives, chopped
- Zest and juice of 1 large lemon
- Cape Herb & Spice Smashed Avo Shaker, to taste
For the Toast:
- 4 large slices sourdough or your preferred bread
- Olive oil, for brushing
- 8 tbsp cottage cheese
Method
1. Marinate the Tomatoes
In a mixing bowl, combine the halved cherry tomatoes, finely minced shallot, dill, olive oil and red wine vinegar. Season generously with Cape Herb & Spice Smashed Avo Shaker. Toss well and set aside to marinate while you prep the rest.
2. Make the Avocado Mixture
Peel and dice the avocados into chunks and place in a medium bowl. Add the chopped chives, lemon zest and juice. Season to taste with Smashed Avo Shaker. Mix vigorously with a fork to partially mash the avocado while still leaving some texture.
3. Toast the Bread
Brush each slice of sourdough with olive oil. Toast in a hot non-stick frying pan (or under the grill) until golden and crisp on both sides.
4. Assemble the Toast
Spread 2 tablespoons of cottage cheese over each toasted slice of bread. Top generously with the creamy avocado mixture, then spoon over the marinated tomatoes.
Serve immediately and enjoy while everything is fresh and vibrant.
