Ingredients

For the Tray Bake:

  • Olive oil, for drizzling
  • 3 tablespoons (45 ml) red wine vinegar
  • 2 red onions, peeled and quartered
  • 300 g vine tomatoes or mixed baby tomatoes
  • 10 baby yellow and red peppers, halved and deseeded
  • 200 g pitted black olives
  • 1 whole head of garlic, halved horizontally
  • ½ ciabatta loaf, torn into chunks
  • 8 pieces of skin-on chicken thighs and legs
  • 2–3 tablespoons Cape Herb & Spice Mediterranean Roast Seasoning

To Serve:

  • 100 g feta cheese, crumbled (optional)

Method

1. Preheat the Oven

Preheat your oven to 180°C (fan 160°C) or gas mark 4.

2. Assemble the Tray Bake

In a large roasting tray, combine the red onions, tomatoes, peppers, olives, halved garlic, and torn ciabatta. Drizzle generously with olive oil and red wine vinegar. Sprinkle over Cape Herb & Spice Mediterranean Roast Seasoning and toss everything together until evenly coated.

3. Add the Chicken

Nestle the chicken pieces, skin-side up, among the vegetables and bread. Position them so the skins are exposed for optimum crisping.

4. Roast Until Golden

Roast for 40–45 minutes, or until the chicken is cooked through and golden, the vegetables are tender, and the ciabatta is crisp around the edges.

5. Finish Under the Grill (Optional)

For extra caramelisation, place the tray under a hot grill for 4–5 minutes. Keep a close eye to avoid burning.

6. Serve

Remove from the oven and top with crumbled feta, if using. Serve hot, directly from the tray.
